Pancakes all day long

Pancakes! Our favorite and our best. On weekends often. American small and puffy or thin and large Swedish style. I like to make them with cooked rice in the batter, or quinoa or barley... It gives them a little bit more texture and feels more like a meal. And it is an ideal way of taking care of some rice/quinoa/barley left overs.

We eat them for breakfast most often but also for lunch and occasionally for dinner. When I was a child we had pancake Thursdays. First my Mum served us soup and after soup came pancakes. I wasn't very keen on soup as a child... But the rule was I had to try the soup to get to the pancakes. So I tried. I tried  all kinds of soups. Some soups I loved, other soups were never tried again...

The tradition has been passed on in its own way to my children. We also have pancake Thursdays every now and then. With soup and the same rules. Not always popular but I think it is a great way of introducing soups and now we have a bout handful different soups that everyone likes. That is a good thing.

We are back from vacation and pancakes are back on the menu to everyone's delight. It has been an incredible summer where many many memories have been made. I think Sweden is the new Mediterranean this summer if we should talk weather. Absolutely amazing!!! I'll tell you all about it later but for now, here is my Swedish Pancake recipe. It is good to be back home.


Swedish Pancakes
Makes approx: 12-14 pancakes

3 eggs
1 3/4 cup dinkel flour (more healthy) or white flour
3 1/2 cup milk
1/2 tsp salt
3/4 cup of cooed rice, barley or quinoa

Instruction:
1. Measure flour and salt into a bowl and mix together.

2. Add half the amount of milk and whisk gently until smooth.

3. Add the rest of the milk and the 3 eggs and mix batter gently until smooth.

4. Stir in the cooked grains and let batter set for 5-10 minutes.

5. Heat up a flat pan to medium heat. Add a little vegetable oil, coconut fat or butter and let melt. Pour in pancake batter in the middle of the pan (don't fill the whole pan!) and wiggle the pan until the batter has covered the whole bottom to make a really thin and nice pancake. When batter is dry on top it is ready to be turned with a cooking spade. Let brown for 20-30 seconds. The pancake is done. Serve with what ever you like best.

  2. Lovely recipe, I would not have thought of putting cooked rice into the batter, but it sounds delicious - will certainly be giving this a go! Thanks for sharing.

    Look forward to hearing more about your holiday in Sweden, it is a country I have always wanted to visit since spending a year in high school working on a project based on Scandinavia.

      Thank you for your message. What can I say??? YOU HAVE TO GO TO STOCKHOLM! You will love it. so much history, beauty and great shopping and food. The architecture is fabulous and the mix between nature. water and big city is one of a kind. Take a boat out in the archipelago and visit a pretty island to stroll around on. Go to museums and visit the outdoor theater fora culture experience. Walk the narrow pebble streets of old town and have ice cream. Watch the guard change at the castle. Stroll the walks along the water between North, East, South and West islands. Every part of Stockholm has its own personality may it be bohemian, business, family or youth. I really hope you will make it happen one day. Welcome to my hometown.

      The china is collected from thrift stores and markets. A set of 16 plates, almost all different. My pride and joy which is used every day.

  4. Yummy! We just had pancakes for dinner this past week too :) Usually there's not enough batter left for me to have any after my hubby & son have their fill but this time there was...yay! Some of my kid's friends think pancakes for dinner is weird...like having pizza for breakfast...but I've done that too...lol.

      Oh no! What a shame . I can see the scenario in front of me. You by the stove making pancakes and the big and small boy patiently waiting for the next one to be served. Make some extra batter next time so you get the chance to indulge as well. Left overs can happily be heated up in the microwave for lunch or snack at any time the next day. :)

      Go for it! EVeryone will be so happy to break the regular routine. And their are more savory ways of eating pancakes too. Neymes (see comment further up) gave me the tips of adding minced meat, cheese and top with tomato sauce like they do in Brazil. Like a taco pancake. I will have to try that.

  13. Must try the quinoa in some. Your table setting is lovely! (I adore blue&white dishes) Mine are blue and white with daily farm life scenes. We like to try and do breakfast for dinner once a week, a big favorite in our house. Another favorite is brown sugar oven baked bacon with pancakes for us..

    Pancakes are also a tradition at home.. every Sunday in winter..
    My favourite are pancakes with apples and cheese and a little bit of maple syrup...
    I cook the apples in a pan before with butter and sugar... hmmm
    Kids are always happy to eat that.

  15. Yummy Annette! I love pancakes and try to make them at least one morning over the weekend :) My hubby thinks I'm crazy when I add things like cheese or mince! To him a pancake is syrup and cream and bananas and chocolate sauce!
